Chipotle Style Burritos

Dinner from last night! Which was my therapy session. It was quite delicious, if I do say do myself. I had a hankering for Mexican food, so I searched the Internet for some inspiration. I knew I found it right away when I saw the word "chipotle!" My boyfriend is a huge fan of Chipotle Restaurants, so I made us both "Chipotle Style Burritos." Here's my recipe:

  • 1 TBSP Vegetable Oil
  • 2 Cloves Garlic, minced
  • 1 tsp Chili Powder
  • From a can of Chipotle Peppers in Adobo Sauce, mince 2 peppers and set aside. Also set aside 2 TBSP of sauce from can
  • 1 tsp Cumin
  • 4 Shakes Cayenne Pepper
  • 1 Can Pinto Beans, drained and rinsed
  • 2 Chicken Breasts, cooked (I had leftover chicken from the night before)
  • 1/3 Cup Water
  • Brown Rice, cooked with lime juice added in. As much as you want, I cooked 1 cup and added 1TBSP lime juice.
  • Any condiments you like! Cheese, lettuce, salsa, etc.
  • Begin cooking rice according to directions with lime juice added in!
  • Heat oil in pan for 2 minutes on medium heat. Never go above medium for this recipe :)
  • Add garlic, chili powder, chipotle peppers, adobo sauce, cumin and cayenne to pan. Stir and let seasoning mixture become fragrant for 1 minute.
  • Next, add pinto beans and cooked chicken breasts. Stir and let stand for a few seconds before adding 1/3 cup water.
  • After adding water, let ingredients simmer for 10 minutes.
  • Mash up the pinto beans before assembling your burrito!
  • Assemble however you like!! I added Chobani as my sour cream substitute, reduced fat shredded cheddar and lettuce

This recipe is definitely a little bit spicy, but oh so good. The seasoning mix really reminded me of how the steak tastes from Chipotle restaurants, without the fat and salt :) WIN!!
