I just have a lot of feelings...

Two posts in one day? Consider yourself lucky...



But seriously, I had a great night! Hit the gym and did weight training. It was my first time in the "Lady Golds" section of this new gym and I really enjoyed it. There were plenty of mirrors and free weights for me to do what I wanted to do. My little heart rate monitor said I burned 400 calories in my hour long workout!



  
On the way home from the gym I stopped in at the grocery store and picked up the essentials for the salad that my BOYFRIEND wanted to have for dinner. I imagine this is how a proud mother feels. He was the pickiest eater when I met him. Somehow I've got him from Mac and Cheese and white bread...to salads and wheat bread, even broccoli!

Here's the recipe for the Strawberry and Feta Salad with Toasted Almonds and Homemade Dressing that I guarantee everyone will love!

Ingredients:

  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1/3 cup Blueberry Pomegranate vinegar
  • 2 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • 1/2 cup canola oil
  • 1 cup almonds
  • Romaine lettuce
  • 1 package sliced strawberries
  • Feta crumbles
Directions:
  • Turn stove onto medium heat and place sliced almonds in pan. Slowly toast almonds to your likeness. (Warning: there's a small window between perfect and burnt. And yes, I found that out first hand haha)
  • Combine garlic, Dijon mustard, honey, blueberry pomegranate vinegar, balsamic vinegar, brown sugar and oil together with a whisk. This is your dressing!
  • Prepare the salads however you want, a large bowl or separated on plates. Place strawberries, feta and almonds on top and dress lightly. 
  • Enjoy :)
