Skinny Chicken "Fried" Rice

Now, down to business...I was bragging about my dad's homemade fried rice and wonton's at work today, and it really got me in the mood for some Chinese food! Now, while his version is better than from a take-out restaurant, it's still not the healthiest. So, I did some research and found a great "skinny" rice recipe that I wanted to give a shot.

Any time that I see a rice recipe I automatically use my go-to rice: Minute Brown Rice. It's still whole grain brown rice, just parboiled. This means it's been precooked and when I go to cook it, it takes 10 minutes instead of 40. It's also dummy proof and I swear you can't get it wrong.

This recipe is Joe-Joe approved so that means ANY man in your life will enjoy it too!

Skinny Chicken Fried Rice
Pre-chicken addition.
Ingredients:
  • 4 cups prepared brown rice
  • 1 pound boneless, skinless chicken breasts, chopped and COOKED
  • 1 cup peas and carrots, from frozen
  • 1 small white onion, chopped
  • 2 cloves garlic
  • 2 eggs
  • 3 Tbsp sesame oil
  • 1/4 cup lite soy sauce
 
Directions:
  • Prepare rice according to package and cook chicken (I baked mine with some Trader Joe's General Tso's sauce on top)
  • Heat sesame oil in large skillet. Add onion, garlic, peas and carrots and cook until vegetables are tender and onions are opaque.
  • Crack eggs into large pan and scramble among vegetables.
  • Add rice, chicken and soy sauce to large pan.
  • Stir and serve!

  1. Oh my gosh I'm making coconut chicken for dinner and this is going to be the perfect side dish! So delish looking...and I love that it's so easy!

  4. MMMMM this will be great to make for my hub. He LOVES fried rice and is finally on the healthy bandwagon. PLUS: there is not one decent chinese place for the stuff when i crave it.

    1. So awesome he hopped on the bandwagon!! My boyfriend was a little slow to warm up, but he's loving it now. I agree about no decent Chinese places...I would love to find one where you can't taste the grease while you eat it!
