Creamy Spinach Artichoke Chicken

I'd be lying if I didn't say I've been distracted this week... I found out that I got an interview for something that is so exciting!! I don't want to share more right now, but keep your fingers crossed!

Alas, no matter how distracted I is never out of my mind. All of my recipes as of late have been (mostly) low starch, low fat and as natural as possible. I've found I feel a lot better, suffer from less bloat and don't ever get that stuffed feeling that I used to at mostly ever dinner.

Creamy Spinach and Artichoke Dip Chicken

  • 1 can artichokes, sliced in thirds
  • 1/2 cup frozen spinach, cooked
  • 1/2 cup nonfat Greek yogurt
  • 1/4 cup Dijon mustard
  • 1 tsp garlic salt
  • 3 chicken breasts
  • Preheat oven to 375 degrees. Grease a glass baking dish.
  • Mix yogurt, Dijon mustard and garlic salt together in a medium bowl.
  • Add artichokes and spinach. Stir until well combined.
  • Slice open the tops of the chicken and place in glass baking dish.
  • Stuff the spinach-artichoke mixture inside.
  • Bake for 20 minutes or until chicken is cooked completely through.
