Clean Eating Chicken Casserole

My morning started off great...I actually got up to run outside! Lately I've been making so many excuses not to run--it's too hot, I'm tired, and so on. So this morning when I couldn't fall back asleep at 530am, I got up and ran! It was literally just me and the bunny rabbits that early in the morning. When I got home I was so energized and ready for the day. I even left on time for work! Wins all around.

Tonight I came home and cooked up a super yummy Healthy Eating recipe! As I alluded to yesterday, it was a fresh take on my momma's chicken casserole. Most of what is in her chicken casserole isn't unhealthy, but it could be cleaned up. So I took out every processed product and replaced it! Joe-Joe didn't get a chance to try it, but I guarantee its boyfriend/husband/roommate approved!

Before you read the recipe, let me tell you why I chose the pasta that I did!



 
Dreamfield's pasta is a great choice for your night time pasta dish! It's packed with fiber and protein. These two ingredients work together in your body to slow down the absorption of the carbohydrate sugars. This then keeps your blood sugar from spiking, which keeps you from feeling lethargic or getting hungry sooner. Don't see Dreamfield's in your grocery store? Look for any pasta that has at least 4g of fiber and 6g of protein per serving!
 
Healthier Chicken Casserole
 
Ingredients:
  • 1 pound chicken breasts
  • 1 TBSP olive oil
  • 1/2 cup chopped mushrooms
  • 1 cup unflavored almond milk
  • 1 TBSP coconut oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 2 TBSP corn starch
  • 1 cup chopped onion and celery
  • 1 package penne pasta

Directions:
  • Preheat oven to 375 degrees.
  • Bring water to a boil in small pot, add raw chicken breasts. Let boil until chicken is thoroughly cooked (15 minutes). Once chicken is cooked, shred it using 2 forks and pulling meat apart.
  • Bring water to a boil in large pot, add box of pasta. Cook according to directions.
  • Sauté mushrooms in olive oil in sauce pan until fragrant.
  • Add almond milk, coconut oil, salt, pepper, onion powder and garlic powder.
  • Add corn starch one TBSP at a time and whisk.
  • Continue whisking until liquid has thickened.
  • Once thickened, place in a mixing bowl.
  • Sauté celery and onion in sauce pan (you shouldn't need to add more oil!)
  • Combine soup, celery and onion, chicken, pasta and 1 cup almond milk together in large bowl (I just used the pasta pot).
  • Place in greased baking dish.
  • Cook for 20 minutes.
  • Optional: Add bread crumbs on top and broil for an additional 3 minutes to crisp it up!

  1. Great run! Getting up early is the only way to do it in the summer time :)

    I'll have to try this for Johnny (since I don't eat meat). I'm sure he'd LOVE it!
