Now, on to other important business. Waking up... I spent nearly 30 minutes trying to find a good ringtone to wake up to this morning!! And I couldn't find ANYTHING! I want a song that doesn't scare me half to death at first tone, but something that is really up beat and happy. I'd like to start my day off on a good foot. This is where you come in....what's your alarm wake up tone?? Do you love it or hate it? Please recommend yours if it's super awesome and leaves you happy! (Well, as happy as you can be that you have to wake up and go to work...)

Skinny Macaroni and Cheese Recipe

I have found the answer to my portion distortion problem when it comes to casseroles!! Disposable aluminum "pot pie" tins. I bought these babies in a 6-pack from the store and it worked great for this Skinny Mac and Cheese recipe! I ate my one serving from the tin, and instead of what I would usually do with a large pan (go back and eat an entire half)...I stepped away! Victory for Wednesday! Please enjoy this boyfriend approved dish (he got the optional ingredients topped on his).
Skinny Macaroni and Cheese
Makes 6 Servings
  • 1 cup low-fat cottage cheese
  • 1 cup original, unsweetened almond milk
  • 3/4 cup low fat cheese
  • 1 TBSP corn starch
  • 1 tsp pepper
  • 1/2 tsp onion powder
  • 1 tsp nutmeg
  • 1 box Dreamfield's pasta (or other low glycemic pasta)
  • Optional: Italian seasoned breadcrumbs, parmesan cheese to top

  • Cook pasta according to directions on package
  • In a blender (or mixer), combine cottage cheese, almond milk, cheddar cheese, pepper, onion powder and nutmeg and mix until well combined.
  • Heat sauce pan on low heat and pour cottage cheese mixture into pan, stirring frequently.
  • Add cornstarch to pan and whisk until sauce becomes thick.
  • Drain pasta and place back in pot. Slowly pour sauce into pot and combine.
  • Using a  3/4 cup measuring cup, portion into 6 individual baking safe dishes (or, pour everything into a 13x9 pan).
  • Optional: Top with Italian seasoned bread crumbs and parmesan cheese.
  • Bake at 350 degrees for10-15 minutes.

Skinny Jalapeno Popper Chicken Recipe

This weekend was another good one. Joe and I watched some friends run the Madison Mini Marathon, went to a pool party and a county fair! Here are a few pictures...

So on Sunday we were both pretty tuckered out. We had to get our T25 double day in though, so we powered through it and rewarded ourselves with my awesome Jalapeno Popper Chicken. Last time I made it I used low-fat cream cheese, but this time I really didn't want to use any cream cheese. I've found that when you cook with Greek yogurt you really can't taste that much of a difference. So I ended up trying a Greek Yogurt/Cottage Cheese combination. This is DEFINITELY Joe approved, so go ahead and make it for anyone in your life!
Skinny Jalapeno Popper Chicken
(Makes 6 Servings)

  • 1/2 cup 0% Greek Yogurt
  • 1/2 cup Low-fat Cottage Cheese
  • 2 Fresh Jalapenos, cut and seeds removed
  • 3/4 cup Reduced-Fat Extra Sharp Cheddar Cheese, Shredded
  • 3 tsp. Mrs. Dash Southwest Chipotle Seasoning Blend
  • 6 Boneless, Skinless Chicken Breasts (either purchased as thin sliced, or make them thin sliced on your own)
  • 1 cup Panko Breadcrumbs
  • 1 TBSP Olive Oil 
  • Preheat oven to 400 degrees.
  • Combine Greek yogurt, cottage cheese and fresh jalapeno slices in a blender or food processor. Blend until well combined and a smooth consistency is achieved. Transfer to medium sized bowl. Add cheese and 2 tsp of Southwest Seasoning and stir. 
  • Add olive oil to sauté pan and heat over medium-high heat. Add breadcrumbs and remaining 1 tsp of southwest seasoning and toast breadcrumbs. Stir frequently so you don't burn the breadcrumb mix.
  • Rinse thin chicken breasts with cold water. Dip into toasted breadcrumbs on both sides. (It's okay if not a lot stick, you just want to get a little extra crunch!)
  • Next, spoon yogurt mixture onto the chicken breast, aim for a heaping spoonful. Roll thin chicken breast up with mixture in the middle and place on greased baking sheet. Repeat with each chicken breast.
  • Finally, pour any extra yogurt mixture onto the top of each chicken breast, top with any remaining breadcrumbs.
  • Bake on 400 degrees for 35-40 minutes.

Getting Real for a Minute

There have been so many things on my mind lately that I just feel like I need to spill them all out on here.

First, thank you to my friends. I have had several friends reach out to me since I've "gone public" with my blog to people I know. One said she continues to be inspired by my Instagram posts. One said that I was doing such a good job and to keep it up. I don't think they realize how much it means to me, but it truly does. I've always been shy about my blog since I started it earlier this year, just because I didn't want people from my past to have a reason to make fun of me. Come on, I'm the girl who loves talking food, nutrition and fitness but isn't a size 2. I feel like I welcome in the ridicule with that fact alone. But by sucking it up and inviting people to read what I've been doing in my free time has really (sorry for the cliche) set me free. Yes, I blog, tweet and IG all about healthy meals, workouts and my life. Yes I workout. No I'm not a size 2, but I can do a lot more push-ups than I ever thought possible right now. I'm still working towards what I want, and that's okay. More than anything blogging has helped me realize what I really want out of life, and how I love to help people. Somebody contacts me on a Friday night about Beachbody and wanting help with their diet and exercise routines. I am beyond excited to email them back and help jump start their journey with me as their accountability and dedicated coach. I think that the excitement tells it all. 

I've also never been more thankful for Joe. He pushes me everyday to follow through on what I say I'll do--even if it's that 5:30am workout that I do NOT want to roll out of bed for. I texted him last week and said "Thinking of going public with the blog. Are you going to be embarrassed?" His reply was the sweetest. Such a supportive and loving boyfriend that I'm so lucky to have. Especially because he's my taste-tester with recipes that sometimes don't pan out to be as delicious as I thought.

Healthy Cauliflower Biscuit Pot Pie Recipe

I AM BEYOND EXCITED TO SHARE THIS RECIPE!! It may be the most delicious thing I've made to date. And I know what you're thinking, how is that recipe even a thing? It can't taste good! But I gurantee you it does! The most awesome thing? This recipe is low-carb, low-fat and full of nutrients!! And for all my Tone It Up girls out there, I'd say it's TIU approved.

One thing that I love is homestyle food. From casseroles to Italian to meat and potatoes, I can't get enough. The only problem with those meals is they're usually butter packed and filled with starches. Those two things tend to sit pretty heavy in your stomach throughout the night and are less-than-ideal for your last meal of the day. Yes, we're better off eating those famous cheesy-potatoes for lunch than dinner girls. So in my never-ending quest to make healthier versions of my favorites, here is a masterpiece! (BTW, you can make this Gluten Free just by using GF All Purpose Baking Flour and GF Soy Sauce)
Cauliflower Biscuit Pot Pie

Cauliflower "Biscuit" Topping
One Head of Cauliflower
2 Eggs
1/2 cup Almond Flour 
1/4 cup Low-Fat Mozzarella Cheese, Shredded
1/2 tsp Garlic Salt
1/2 tsp crushed Garlic

-Preheat your oven to 400 degrees
-Wash and dry the head of cauliflower.  Cut it up into small pieces and shred in a food processor. Or, if you're like me and don't have one, throw it into the blender in batches :)
-In a large skillet place 1 TBSP coconut oil and melt. Place shredded cauliflower in pan and cook for 7 minutes, stirring occasionally.
-Mix all the ingredients together in a bowl until you have a wet pasty like consistency.
-Grease a 9x9 pan and pour "dough."
-Place in the oven and bake for 15-20 minutes or until the top just starts to turn golden. You'll finish baking it later! Take out of the oven and set aside.  
2 Boneless, Skinless Chicken Breasts, cooked (I boil mine)
3 tablespoons olive oil, divided
1/2 cup yellow onion, diced
1/2 cup celery, diced
1/2 cup carrots, diced
2 cloves garlic, crushed
1 medium potato, diced (should equal about 1 cup)
1/4 cup all-purpose flour
2 teaspoons corn starch
2 tablespoons soy sauce
1 1/4 cups vegetable broth
1/2 cup fresh or frozen peas
1 teaspoon finely chopped sage
1 teaspoon thyme leaves

Directions, Part 2
-Keep oven to heated to 400° F.
-Heat 2 tablespoons of olive oil in a skillet. Add onion, celery, carrot, and garlic and sauté until onion is translucent.
-Add potato to the skillet and cook, stirring frequently, until tender but not mushy.
-Add flour and soy sauce to the skillet and stir into the vegetables.
-Add corn starch to vegetable broth in a bowl OUTSIDE of pan, then add to pan and stir until combined, scraping all the browned bits from the bottom of the pan.
-Add chicken, peas, sage, and thyme and stir until combined.
-Remove from heat and pour filling into a 13x9 baking dish.
-Place cauliflower "biscuit" on top and push down so it covers the entire top of filling.
-Cook for 20-25 minutes.

Greek Style Shrimp and Orzo Salad Recipe

Now, onto the real deal. That is, the recipe that you clicked on the page for. I adapted the recipe from Team Beachbody, and it's also featured on the 10 Day Challenge Nutrition Guide! The peeps on my challenge are going to be eating so deliciously on August 21st. Can't wait!

First things first, get whole wheat orzo pasta. You will honestly not be able to tell the difference. And its always great to get a little extra fiber in every meal!

Greek Style Shrimp and Orzo Pasta Salad
(Makes about 4 Servings)

1 cup, dry, whole wheat orzo pasta
2 TBSP Lemon Juice
2 TBSP Red Wine Vinegar
1 tsp. Black Pepper
1 1/2 tsp. Oregano
1 TBSP Extra Virgin Olive Oil
2 Green Onion Stalks, Chopped
12 Cherry Tomatoes, sliced in half
1/2 Cucumber, sliced into bite size pieces
16 Shrimp, (I use frozen, pre-cooked so that all I have to do is thaw them!)
Black Olives (to taste)
1 cup Feta Cheese, Low-Fat

Cook orzo according to package directions; drain and set aside. Thaw shrimp in cool water. In a medium bowl, whisk together the lemon juice, vinegar, pepper, oregano and oil. Wash and chop onion; halve tomatoes; and peel and dice cucumber. Toss all ingredients together. Serve warm, at room temperature, or cool! Tip: Don't put Feta on hot pasta unless you plan to eat it hot. Otherwise, this will stink up the fridge real nice.

Electric Bill Reality Check

Well, it finally happened. I got a bill in the mail I was SO appalled by---that I immediately emailed Joe and told him all the things we were NOT going to be wasting electricity on anymore. I kind of felt like my dad mixed in with a little bit of Monica Geller.

The things that I told Joe we will not be doing anymore (and that I'll probably be the one to complain about)....
  1. Drying clothes. This is a luxury we won't be playing with anymore. I mean, we have a drying rack don't we?
  2. Fans during the day. The loft gets pretty hot so we've kept the fans on day in and day out to circulate the air that comes from our 1 air conditioning wall unit. That gravy train has ended, my friends.
  3. Using the dishwasher more than 1x/week. Mr. Joseppi is going to have to start washing his share of dishes by hand now.
  4. Forgetting to turn off my closet light/hair straightener/curling iron. Okay, all are my fault and I'm really going to try and stop. Plus, leaving your hair tools on all day is just plain dangerous.
Any of you out there have good energy saving tips? I'm open for suggestions, as is my wallet.

Weekend Wrap-up

How has your weekend been? !

Friday morning Joe and I were trying to think of what fun activity would get us through the work day. What we came up with, was awesome. COMEDY CLUB! Madison has a comedy club that hosts shows every Friday and Saturday at 8 and 10:30. We rounded up a few friends and then got through the workday, somehow! We headed downtown and sat outside, enjoyed some booze and headed into the show. The acts were all completely inappropriate and hysterical. Such a good night!! We even talked with one of the comedians afterwards and got the skinny on how the comedy business works.

Saturday we went shopping downtown and then spent most of the day recovering. Friends on repeat and naps :) My kind of day! And today I spent way too much money at New York and Company but it was so needed. I was over every work outfit that I have and needed a fresh look. Being the bargain shopper (that I try to be), I saved over $100!! SCORE!

I also bought all of the Shakeology for the Shake and Shed and can't wait for it to start! I'm going to be tracking the pounds lost too so that I can quantify the results for you all!

You Say Potato...

Yesterday I watched Joe play his last softball game of the season (thank goodness!). This is reason number 113 why I know that I'm not ready for kids. How do parents go to all the kids games? How do they not sit there on their phone out of boredom? I really don't know how I'm ever going to attend all of my kid's sporting events. Good thing thats years away.

Anyway, so when we were walking back to the car he said something that made me cringe. It wasn't the word...but the way he said the word. Reese's. ReesEEEE's to be exact. UGHHH. Blood came out of my ears. It's ReesIS. Because the family that created them is the Reese family. Not the ReesEEE family.

Don't get me wrong, I was known as the girl who mispronounced every word possible growing up. There's a few that I won't ever live down in my family. Seriously, every time we drive by an Econo Lodge the whole damn family laughs and points at me, "lovingly" remembering the time I said "ECKoNO" Lodge instead of Econo.

I started to think about all the words people can say so differently just because of where they're raised. Here are a few of the good ones we came up with:

  • Heinz. I seem to insert a T into the word and say HeinTz. Joe claims this is blasphemous and I should stop immediately.

  • Water. Yes, I'm looking at all you Philadelphia kids out there. It's water, not wUter

  • Mom. This one doesn't really bug me, but Joe calls his mom, mum. Not mom. Weirdo.
  • Bagel. This one can't be typed. Some people just say it super weird. Know what I mean? I think its those Philly/Jersey people again.
  • Wash. Again, I blame Philadelphia for letting people insert an R into the word... its wash, not waRsh.
  • Lancaster, Pennsylvania. It's pronounced LancESTer, not LanCASTer.

It seems that there's a trend going on...people from Philadelphia just don't talk correctly. Haha. I'm just kidding :)

Are there any words people mispronounce around you that drives you crazy? I'd love to hear them!! I need a good laugh today at work...because...well... it's Friday!!
