Turkey Day

Happy Thanksgiving!! I'm sure you're expecting me to spell out all the things in my life that I'm thankful for. But, I'm tired of reading those kinds of posts and I refuse to take part haha. Just like you, I am thankful for many, many things. I hope you took a few minutes today to tell someone you love that you are thankful for them (even if its a dog, because you all know I'm thankful for my parent's dog but he's hundreds of miles away so I couldn't tell him directly).
This was our second Thanksgiving away from family, but a seriously delicious one! Last year we went to an all you can eat buffet with friends and were a little disappointed with the food. THIS YEAR, we went over to our friends house--who insist on calling me by my full name, "Jessica Beachbody"-- and had amazing food. They made the turkey, gravy, creamed corn and sweet potatoes; and we brought the fruit, mashed potatoes, green bean casserole, rolls and dessert. Nothing I made was healthy so  I won't be posting any recipes. I did find this CUTE turkey on Pinterest so I brought it along to show my support of having at least 1 healthy option.

After dinner we watched the Raiders play the Cowboys, after which I shed a few tears because my team (the Raiders) always get my hopes up, and then wreck them in the second half. They'll come back around though, and you heard it here first.
I also worked out this morning. I didn't sign up for any 5K's, so it was a HIIT workout and abs from TurboFire.
Currently obsessed with my Under Armour shorts. SO COMFY!
And, in other news......
They gave me the batteries to the remote for the TV in my temporary office.......on Tuesday....which everyone knows is Law and Order: SVU marathon day on USA Network. Needless to say, I had to turn it off because I was way too distracted.

My favorite person turned another year older! We celebrated by going out to dinner, opening his presents and eating homemade KitKats that I picked up from our favorite restaurant. I love this man!

The PhotoBooth pictures from my college roommates wedding got posted online. I thought I never had to see them again...boy was I wrong. HAHA 

And Penn State plays Wisconsin this weekend in football!! I have to work the event, but there are definitely going to be some proud PSU fans in the stands. If I'm lucky, my boss will take me onto the field during the game. Is it okay to ask BOB (Bill O'Brien) for a pic during the game??

Thanksgiving Breakfast Recipe! + Bonus

This weekend was pretty calm, and I liked it. After traveling last weekend and drinking/eating way too much I was pleased to have nothing to do! On Saturday Joe-Joe and I went to the Badger's hockey game and were spoiled rotten by sitting in the suite section. Major perk! I'm already running into a problem though....this coming weekend Penn State plays Wisconsin in football....and I have to work the game! I'm currently trying to figure out the best outfit in which I can subtly shout my allegiance to PSU without offending my new employer. Any thoughts are appreciated.
But before the Penn State game there's Thanksgiving!! Thanksgiving means a lot of good food. So, I have a challenge for you. Run a 5k on Thursday morning (mine will be on a treadmill because I never signed up for a race), and then make these amazing Chocolate Chip Pumpkin Pancakes to start your day! By getting protein, carbohydrates and healthy fat into your body before Thanksgiving dinner you'll feel less like indulging. Promise!
Chocolate Chip Pumpkin Protein Pancakes
(Makes 2 Servings)
  • 2 Packets (or 2 scoops) Vanilla Protein Powder
  • 1/4 cup Almond Flour
  • 1/2 cup Unsweetened Vanilla Almond Milk
  • 1/4 cup Pumpkin Puree
  • 3 Egg Whites
  • 1/4 cup Chocolate Chips
  • Mix protein powder, almond flour, almond milk, pumpkin puree and egg whites in a mixing bowl.
  • Fold in chocolate chips.
  • Heat a skillet on medium-high heat and portion batter into 4 pancakes.
  • Cook and flip.
  • Enjoy with a friend!
Copycat Starbuck's Refresher Recipe!
  • 4 cups water
  • 4 Tazo Passion Tea Bags
  • 2 cups Lemonade (one with no artificial sweeteners like Splenda or aspartame is best)
  • Bring 4 cups of water to a boil. Steep tea.
  • Combine tea with lemonade and cool down with ice cubes.
  • Enjoy!

A New Take of Stir Fry

Last night I was really excited to try a new stir fry recipe. Usually I just mix random frozen vegetables with shrimp or chicken and come up with a sauce out of soy sauce, water and corn starch. But I wanted something more...and here's what I came up with!
Lightened Up Stir Fry
  • 1 egg white
  • 3 Tbsp cornstarch
  • 1/8 cup fish sauce
  • 3/8 cup reduced sodium soy sauce
  • 1 packet Chinese Stir Fry or Fried Rice seasoning
  • 1 pound boneless, skinless chicken breast
  • 1 head of broccoli, chopped into bite sized pieces
  • 2 Tbsp olive oil
  • 3 cloves garlic
  • 1 bunch scallions, thinly sliced
  • 2 bell peppers, chopped
  • 1 red jalapeno pepper, thinly sliced
  • 1/4 cup slivered almonds
  • Bring a pot of water to a boil. Meanwhile, whisk egg white, 1 Tbsp cornstarch, fish sauce, 1/8 cup soy sauce and 1/4 of the seasoning packet in a bowl. Add the chicken and toss to coat. Whisk the remaining  cornstarch with 1/4 cup soy sauce and 1/8 cup water and set aside.
  • Add broccoli to boiling water and cook until tender, about 1 to 2 minutes. Drain and rinse.
  • Heat 1 Tbsp of olive oil in a large skillet over medium heat. Add the chicken and cook until no longer pink. Transfer to a plate.
  • Add 1 Tbsp oil to pan, and sauté garlic for 30 seconds. Add the scallions and peppers and stir fry for 2 minutes. Add another 1/4 of the seasoning packet, chicken, broccoli and almonds and stir fry for another 2 minutes.
  • Reduce heat to medium and whisk the soy sauce/cornstarch mixture from above into skillet.
  • Stir until thickened for about 3 minutes.
  • Enjoy!

Consider Me Surprised

Here I thought I was shopping-while-champagning again when a package from KikiLaRue showed up at my doorstep Monday. In it was the scarf and pants I just put on my wish list the other day! In my mind I thought I had just given up on waiting, and bought them for myself. Then today as I was driving to work my mom called me and asked if I had received a package...I received 3 packages while I was away. You can say I like to shop online :) Low and behold, my momma was the one who bought me the clothes from my wishlist!! I felt so bad that I didn't know it was her and just put the clothes in my closet without thanking her! Bad child! I realllly love the scarf and pants though. I'll be wearing them tomorrow at work!
With the holiday's approaching I keep thinking about how everyone freaks out at this time of the year. And I'm no different. "Do I look nice? Do I look fat? Omg I'm so pale I hate winter." And "One piece of cake won't kill me." Yeah, until one piece of cake turns into 6. Anyway, over the next few weeks I'm going to be sharing some of my nutrition and health tips to help stop the hunger train and the negative thought train this time of year.
Today, it's all about Breakfast. Yes, you've heard its the healthiest meal of the day but you STILL don't make time for it? You should! Breakfast is your starting fuel for the day. Your body needs it to jump start and ignite your metabolism for the rest of the day. Due to that, you should probably pick something heavier on the carbohydrates with a good amount of proteins and fat as well. I like to have my shake (Shakeology) for breakfast because I get carbohydrates, protein, fat, vitamins, minerals and probiotics all at once. But that doesn't mean you have to...some other great breakfast options include:
  • Oatmeal with 1/4 cup nuts, 1/4 cup dried fruit and 1 Tbsp brown sugar
  • Egg Whites on Whole Wheat English Muffin
  • Breakfast Burrito:
    • 10 inch whole wheat tortilla with the following cooked and combined inside:
      • 4 egg whites
      • 1/8 cup salsa
      • 1/4 cup reduced fat cheese
      • 1/4 cup black beans
Before breakfast I also LOVE to get a quick workout in.... now, I'll be honest here, I've SUCKED at that this week. With the cold weather starting I have zero motivation. I'm doing my best to work past that though, because change doesn't happen if you don't work for it!

Fruit Salsa: Because I'm Pretending Summer Isn't Over

I have a seriously AMAZING recipe for you today. You may think “Fruit Salsa”?? It’s not summer
anymore. But I’m not willing to give up on it. Especially because I can use creative ways to get my fiber on—and I’m guessing so can you. I originally wanted this recipe because of these chips I found:

They’re so good! And at 100 calories/bag, with only 3g of sugar—I need a good partner to pair it with. But, if you can’t find these in your grocery store, then you can always make your own cinnamon chips too! You’ll find a recipe for that below as well!

Fruit Salsa
  • ½ pound strawberries, diced
  • 2 plums, pitted and diced
  • 2 kiwis, peeled, quartered and sliced
  • ¼ pint blueberries, rinsed
  • 10 oz pineapple tidbits, drained
  • ¼ cup apricot preserves
  • Juice of ½ a lime
  • 1 Tbsp brown sugar
  • Mix preserves, brown sugar and lime juice.
  • Fold all fruit, cut as stated, into sauce and stir until well combined.
  • Serve in a pretty bowl!

Cinnamon Sugar WW Tortilla Chips
  • 8 whole wheat tortillas, soft, cut into wedges
  • ½ cup sugar
  • 2 Tbsp cinnamon
  • Baking spray
  • Place tortilla wedges onto baking sheet.
  • Lightly spray with non-stick baking spray just enough to wet top of tortillas.
    Combine cinnamon and sugar in a bowl.
  • Lightly sprinkle cinnamon sugar mixture over tortillas.
  • Bake at 350 degrees F or until light golden brown and crispy.

Weekend and My Wish List

This weekend was my first game day as a Badger! It went great and I got to experience the game from the field!! So grateful to my boss for getting me down there. I think he was excited to see me so excited. I told him if he got me on the field for the Penn State vs. Wisconsin game I'd go crazy...he said sure. BOOM! Can't wait!
That's not a real guy, he just shows off the uniform.

Gave up on my nice shoes by halftime.

Now, onto some of my wish list for November. After buying 2 plane tickets home to PA, I've decided not to go spending crazy this month, my credit card can't handle it :) So, hopefully Mom, Dad, Brother and Boyfriend all check this post out....

Gloomy Tuesday

Wow. Today is a super gray and rainy in Wisconsin. And it's dark by 5pm. Definitely feeling unmotivated and just want to curl up on the couch...which I did after my TurboFire workout!

At work today I spent a lot of time looking for loose leaf teas to purchase and sample. I love love loose leaf tea, do you? Hot tea may be one of my all time favorite parts about fall. It also fits into my cleanse that I started today so that helps :)

And last night I made Tone It Up Protein Bars for the week. They're always perfect as a snack in between breakfast and lunch! They also taste like a cookie which is an added bonus. Here's the recipe and make sure you give it a shot!

(Makes 16)

1 cup Natural Peanut Butter (creamy or smooth) (you can also use almond butter!)
1 cup Honey
1 cup Old Fashioned Oatmeal
1 cup Diced Dried Apricots
1 cup Sliced Almonds
3 scoops Perfect Fit Protein Powder (or any vanilla protein powder!)

1)In medium size pot, heat Honey & Peanut Butter on stove on medium heat until texture is runny.
2)Mix in Apricots, Nuts, Oatmeal, & Protein Powder
3)Stir until all ingredients are well coated
4)Grease a 9×9 pan with fat free non-stick spray.
5)Press in ingredients evenly
6)Cool in fridge for at least 45 minutes
7)Slice & wrap individual bars in foil or plastic wrap.

Where Have I Been??

Workin' people!! Haha. My new job started last week and its a DREAM!!  I feel so lucky to have found this job and can't wait to keep learning more. The environment is so laid back and relaxed and fun. A great change :) I work hard during the day and I have a boss who holds high expectations but doesn't micro manage me. Jackpot!!

Also, if you remember my internet issue last week, I was pretty much off the grid because of it! It's hard to blog from your phone. But, the new internet finally got hooked up and I'm back on track!

I start the Beachbody Ultimate Reset on Tuesday, so you'll be seeing lots of updates about my journey. I think that by sharing it with you all I'll be motivated even more to keep going on those hard days!

This weekend Joe-Joe and I went to a Badger hockey game, ran a lot of errands and relaxed on the couch. And currently I'm thinking about doing some online shopping.
