A New Take of Stir Fry

Last night I was really excited to try a new stir fry recipe. Usually I just mix random frozen vegetables with shrimp or chicken and come up with a sauce out of soy sauce, water and corn starch. But I wanted something more...and here's what I came up with!
Lightened Up Stir Fry
  • 1 egg white
  • 3 Tbsp cornstarch
  • 1/8 cup fish sauce
  • 3/8 cup reduced sodium soy sauce
  • 1 packet Chinese Stir Fry or Fried Rice seasoning
  • 1 pound boneless, skinless chicken breast
  • 1 head of broccoli, chopped into bite sized pieces
  • 2 Tbsp olive oil
  • 3 cloves garlic
  • 1 bunch scallions, thinly sliced
  • 2 bell peppers, chopped
  • 1 red jalapeno pepper, thinly sliced
  • 1/4 cup slivered almonds
  • Bring a pot of water to a boil. Meanwhile, whisk egg white, 1 Tbsp cornstarch, fish sauce, 1/8 cup soy sauce and 1/4 of the seasoning packet in a bowl. Add the chicken and toss to coat. Whisk the remaining  cornstarch with 1/4 cup soy sauce and 1/8 cup water and set aside.
  • Add broccoli to boiling water and cook until tender, about 1 to 2 minutes. Drain and rinse.
  • Heat 1 Tbsp of olive oil in a large skillet over medium heat. Add the chicken and cook until no longer pink. Transfer to a plate.
  • Add 1 Tbsp oil to pan, and sauté garlic for 30 seconds. Add the scallions and peppers and stir fry for 2 minutes. Add another 1/4 of the seasoning packet, chicken, broccoli and almonds and stir fry for another 2 minutes.
  • Reduce heat to medium and whisk the soy sauce/cornstarch mixture from above into skillet.
  • Stir until thickened for about 3 minutes.
  • Enjoy!
