21 Day Fix - New Workout AND Nutrition!

28 Days Into the New Year...

Well, we're 28 days into the new year and I have a question for you: What have you accomplished? What steps have you taken to make the change in your life that you wanted to? Have you started to see some results from your hard work, or have you been cheating along the way?
New Year's always leads us to Resolutions, but a resolution is NOTHING without the follow through. I asked my current challenge group what their greatest accomplishments have been so far and I'm excited to hear what they say. They're really attacking the fitness challenge head on by getting RID of the excuses and pushing play on their DVD players. The biggest struggle for everyone has been...and usually is...NUTRITION!! Do you relate? Despite being an RD, y'all know I struggle with eating properly day in day out as well! I certainly don't eat bad foods, but I do eat too much of the good stuff. Which stops me from reaching my goals just as much!
I want to remind you right here, right now...that THIS MONTHS DIET is NEXT MONTHS BODY!! Do not underestimate the role that nutrition plays in your weight loss, muscle building, and toning!

Relays Headphone Review

Happy Monday!!
Why am I so happy? I was offered the opportunity to review a new pair of headphones offered through Verizon wireless!! I'm not really sure how I got onto the list...but I'm happy I did!

The headphones are Sol Republic Relays. Now, if you're like me you really don't keep track of what the brand new headphone on the market is. Instead, you've surrendered to the fact that your ears will always hurt no matter what you buy.  And if you're REALLY like me, you only recognize the Sol Republic logo because of Michael Phelps at the olympics. (You know, those over the ear headphones he wore as he walked out to the pool deck...). Good advertising.
Any way, I've tested them out and I'm going to share my top 5 reasons for why they're more awesome than what you currently have:
  • Ear Tips in 4 Sizes: I hate when ear buds don't fit in my ears. It makes me question whether I'm normal, or have extremely small/large ear canals. With the headphones, you have 4 different size ear tips to make sure you get the size that fits you perfect! I'm the 2nd largest (Maybe i do have big ear canals? Whatever...).  The cusion is also incredibly comfortable.
  • Microphone/Sound Adjustment Included: Maybe this is "standard" now-a-days, but I still find it to be one of the most convenient parts of ear buds. Especially when I'm walking to work in -20 degree wind chill and someone calls me.
  • Shirt Clip: I HATE when I'm working out and the cords from my headphones jump back and forth in front of me, distracting me like a hypnotic string. Sol Republic took care of that with a little clip. Don't like clips? It's detachable.
  • i5 Sound Engines: Okay, I didn't know what that was either! But it means that the sound quality you get is top of the line. My favorite part is how awesome the bass sounds from Timber, my current running song obsession.
  • Sturdy Plug: I've ruined 4 pairs of iPhone ear buds over the years because of how weak the plug area of the cord is. When I twist it around my phone (even though i know you're not supposed to do it), the cord eventually breaks. Sol Republic made their plug area sturdy (and they include a handy dandy carrying bag!). I'm excited to have a lasting pair of headphones!

What I've Been Doing Lately...

First, I've been really busy with the opening of my healthy eating café! Although I've been putting in long hours all week, standing for almost 14 hours one day... I can't believe how lucky I am!! This is the most exciting and rewarding job I've ever had. There's something to be said for challenging yourself mentally and taking on a project that terrifies you. When you see it come together the sense of accomplishment is unparalleled. I know that I have a few more months of long days, but it will be worth it in the end! I will be a manager and developer of a healthy eating café, which is something not many Registered Dietitians can say.
Another proud moment has been keeping up with my workouts!! It would be really easy to give up and take rest days all the time, but I'm no longer that person. I even came home from my long day, laced up my shoes and did intervals! Granted my heels hurt like a mother from standing all day, but eventually the pain from my muscles made that seem like nothing.
This weekend Joe-Joe had his friends fly in for the Beer and Cheese Fest! Last year my friends came, then they decided to never visit me in the winter time again, so we asked his friends (newbs didn't know how cold it would be :) We had such a good time! Beer and cheese everywhereeee. I worked out in the morning though, so its okay :)
Next up, I'm going to start doing more posts about form and fun exercises to incorporate into your daily routines. Here's my first tip.... Squats are ALL ABOUT THE SHOELACES! You have to be able to see them if you want to get results in your behind (and keep your knees safe).

Skinny Tuna Salad

Do you love mayo based salads?? UMMM I DO!!! I really can’t get enough, but the only problem is—they’re usually horrible for your waistline. How do you fix it? Use Greek Yogurt instead! Here is my current FAVORITE recipe for Skinny Tuna Salad.

Jess’s Skinny Tuna Salad


  • 10 oz can Albacore Tuna, Drained
  • 1 oz Celery, Diced Small
  • 1 Green Onion, Green Part ONLY cut small
  • 1/8 cup Light Mayonnaise
  • 1/8 cup Chobani, Nonfat Plain
  • 1 tsp Dill Weed
  • 1 tsp Red Wine Vinegar
  • ½ tsp Salt
  • ½ tsp Pepper
  • Combine ingredients in order listed above. 
  • Stir well. Serve on whole wheat wrap or toasted bread! 
  • Enjoy!

Healthy Comfort: Skinny Baked Potato Soup

It should come as no surprise to all of you that I was completely excited to receive this unexpected gift today from my mom and dad:

What is it you ask?? THE NINJA COOKING SYSTEM! It's a crock pot, an oven, a steamer and a stove top all in ONE! Holy moly!! I can't wait to make more recipes in it! Recipe number one was today, and it was my mom's Skinny Baked Potato Soup. Perfect for a winter night when you don't feel like exerting a lot of energy cooking and want to keep it healthy. 100% more healthy than canned soup, with a LOT less sodium and fat. Enjoy!
Baked Potato Soup
  • 30 oz Package Frozen Diced Potatoes (small cubes)
  • 1 can Heart Healthy Cream of Chicken Soup (it's lower fat, lower sodium)
  • 28 oz Low Fat, Reduced Sodium Chicken Broth
  • 8 oz Low Fat Cream Cheese
  • 1 cup Fat Free Milk
  • Topping, Reduced Fat Cheddar Cheese, Shredded
  • Topping, Cooked Turkey Bacon Crumbles (follow directions on package)
  1. Combine potatoes, cream of chicken soup and chicken broth. Cook on low for 1 hour in crock pot.
  2. Add cream cheese, cook another 20 minutes.
  3. Add milk, cook 15 minutes.
  4. Top with shredded cheddar and crisp turkey bacon!
  5. Serve with a fresh side salad or 1 cup steamed broccoli.

I LOVE FOOD - Chopped Salad Recipe

I created the most amazing Chopped Salad ever!! It's so easy, delicious and healthy!! Give it a try for lunch tomorrow :)
Crisp Chopped Salad
-3 cups Mixed Greens
-2 Tbsp Blue Cheese
-1/4 cup Candied Pecans
-1/8 cup Craisins
-1/2 cup  Broccoli
-1/2 cup Carrots
-3 Tbsp Balsamic Vinagrette
-Put all ingredients in a bowl. Use CLEAN kitchen scissors to cut or "chop" everything.
-Enjoy! (Told you it was easy)

Healthy Crock Pot Orange Chicken

Well, the holidays turned into an unexpected hiatus from the blog! So sorry to all my lovely readers...I missed you!
After Christmas I went and visited Joe in his hometown...and then we drove the 10 hour drive back to Madison together. He's a saint and drove most of the way, leaving only 2 hours for me to cover! Can't complain about that at all. I've also been super busy at my real-life job also because the grand opening of my store is TOMORROW!! I'm ready for it..mostly so I stop thinking at night before bed about all the things I should do the next day. Seriously, no matter how many lists I make AT work, I always come up with new things I need to get done.
Other than that, Madison has been one cold, mean lady lately. Today was -40 degrees F. Enough said.
Here's a great recipe for you to try out, whether its cold where you're at or not!
Crock Pot Orange Chicken
Serves: 4
Per usual, I'm a bad food blogger and didn't snap a pic.
This is what it looks like though! Credit goes here!
  • 4 Boneless, Skinless Chicken Breast (cut into cubes)
  • 1 cup, 100% Orange Juice
  • 1/4 cup Honey
  • 1 tsp Marjoram Leaves
  • 1 Tbsp wheat flour
  • 2 Tbsp soy sauce
  • 2 small oranges (or cuties)
  • 1 Tbsp corn starch
  • 4 cups cooked brown rice
  • Add the chicken breasts to the crockpot.
  • Mix orange juice, honey, marjoram leaves, wheat flour and 1 Tbsp soy sauce together in a bowl. Pour over chicken.
  • Cook on LOW for 6 hours, or high for 3.
  • Open the crockpot and stir, add oranges and cook for additional 15 minutes.
  • IF you would like a thicker sauce, follow these steps:
    • While waiting during the 15 minutes, combine remaining Tbsp of soy sauce with 2 Tbsp corn starch and 1/4 cup broth from pot. Stir until no corn starch lumps remain. Pour into crock pot and stir. This creates a thicker sauce. If you want even more thickness, repeat.
  • Serve over top 1/2 cup brown rice and enjoy!
