Healthy Comfort: Skinny Baked Potato Soup

It should come as no surprise to all of you that I was completely excited to receive this unexpected gift today from my mom and dad:
 

What is it you ask?? THE NINJA COOKING SYSTEM! It's a crock pot, an oven, a steamer and a stove top all in ONE! Holy moly!! I can't wait to make more recipes in it! Recipe number one was today, and it was my mom's Skinny Baked Potato Soup. Perfect for a winter night when you don't feel like exerting a lot of energy cooking and want to keep it healthy. 100% more healthy than canned soup, with a LOT less sodium and fat. Enjoy!
 
Baked Potato Soup
 
Ingredients
  • 30 oz Package Frozen Diced Potatoes (small cubes)
  • 1 can Heart Healthy Cream of Chicken Soup (it's lower fat, lower sodium)
  • 28 oz Low Fat, Reduced Sodium Chicken Broth
  • 8 oz Low Fat Cream Cheese
  • 1 cup Fat Free Milk
  • Topping, Reduced Fat Cheddar Cheese, Shredded
  • Topping, Cooked Turkey Bacon Crumbles (follow directions on package)
Directions
  1. Combine potatoes, cream of chicken soup and chicken broth. Cook on low for 1 hour in crock pot.
  2. Add cream cheese, cook another 20 minutes.
  3. Add milk, cook 15 minutes.
  4. Top with shredded cheddar and crisp turkey bacon!
  5. Serve with a fresh side salad or 1 cup steamed broccoli.
