Super Easy Sweet Potato Curry

Well, the snow is back again in Wisconsin. Blahhh!! I'm so ready for Spring weather! Partly because I'm also ready for the heating bill to go down. It's expensive to heat an apartment! No wonder my parents always kept the house at like 64 degrees growing up.
Anyway, the cold weather is good for one thing: hot food! Tonight I was craving some Indian take out, but instead decided to give it a go in my Ninja Cooking System (have I mentioned how much I love this 1 pot wonder??). Here's what I came up with! I had all of the ingredients already except the Coconut Milk, which is a pretty good recipe if you ask me :)
Sweet Potato Curry
  • 2 Tbsp Vegetable Oil
  • 1 Onion, Diced
  • 3 Tbsp Curry Powder
  • 1 Tbsp Ground Cumin
  • 1 tsp Ground Cinnamon
  • 3 Sweet Potatoes, Peeled and Diced (make the dice fairly small so that they cook within the 25 minutes of simmering)
  • 1 (14.5 oz) Can Lite Coconut Milk
  • 1 (14.5 oz) Can Diced Tomatoes
  • 1 (14.5 oz) Can Chickpeas, Drained and Rinsed
  • 1/2 cup Water
  1. In a large skillet (or Ninja Cooking System!), heat the oil over medium-high heat. Stir in the diced onion and all spices. Cook until onions have begun to get soft.
  2. Add the rest of your ingredients to the pan and stir.
  3. Bring to a boil, reduce heat and simmer for 25 minutes.
  4. Serve over brown rice or with Naan (which I totally wish I had!)
