Cauliflower Fried Rice!

A good friend will text you when she tries a weird food that she knows you'd like...and a really good friend would just KNOW that you had a whole bag of cauliflower in the fridge, with nothing to do with it. That's what happened last night. She had just made Cauliflower Rice and knew I'd like it, and man, she was right. I'm obsessed! Here's the recipe I threw together last night! You WILL need a food processor though!

This is how fine your cauliflower "rice" should be.

My pantry staples.

MMM fried rice!

Ingredients:
  • Caulifower - Either 1 head chopped, or 3/4 of a bag
  • 3 Tbsp Grapeseed Oil (or sesame oil)
  • 1 Onion, Medium, Diced
  • 1 Tbsp Minced Garlic
  • 1 cup Peas
  • 1/4 cup Soy Sauce
  • Sriacha, to taste
Directions:
  • Put chopped cauliflower through the food processor so that you get very fine pieces.
  • In a large saute skillet, heat oil and brown the garlic.
  • Add onion and cook until translucent.
  • Add cauliflower, peas, soy sauce and sriacha. Cook for 5 to 10 minutes.
  • Tips: Feel free to add carrots, chicken or scrambled eggs to spice up this new take on an Asian classic!

What I Didn't Know About Starting a Business

I'm a business owner. Does that mean I do everything right? Know all the right things to say? Turn everything I touch to gold? Absolutely not. Oh, how we all wish life were that easy. But it's not. It's not a one-size fits all world and there's no magic bullet that will take you from the bottom to the top. You really have to work at it, day in and day out. Here's a post all about my frustrations as of late. And my dreams.

Working at something day in and day out doesn't only apply to business though, it applies to your health and your relationships. Because just when you think you've got it all figured out, a curve ball comes your way. Someone puts you down for what you're doing, somebody makes a joke about your dream or they talk about how you still look the same behind your back. Believe me, I've heard it all. It's like a punch in the gut when all you want to do is help people change the course of their life. Because it's a hell of a lot easier to be healthy now, than to be unhealthy later. That's no secret. And how to succeed in a business is no secret either. Consistency is key. Invite people to join you. Be a positive person.

I always have a hard time dealing with those unsupportive, negative, jokers in my life though. I have to remind myself EVERY SINGLE TIME I'm thrown one of them...to ignore 'em. I wish I had a really quick, one size fits all answer for you, but I don't. You have to learn to ignore them and you'll have to remind yourself every. single. time. It's just how it goes.

Focus on you and why you're doing what you're doing. Whether it's to be confident in your own skin, or to provide a better life for your family. As long as YOU enjoy what YOU do...then you're on your way! And all those negative people will be stuck in the past, looking up at you and wondering how you did it when they thought it was impossible. Because we all know NOTHING is impossible with consistent effort.


Me for example? I started a business because I want to live a life that I design. I know that in a few years I'll be moving away from Wisconsin, and I want this job to be the last "full time" job I have. I want to work from home, teach a few classes and inspire others to chase their dreams. I've never been "good" at working the 9-5 grind. I'm always thinking about more important uses of my time. And now a days, that mostly consists of checking in with my challengers. Texting them during the day to make sure they're keeping up with what they promised to themselves. Okay, okay, I'd also like to life a life that I design for the working out benefit. I'd love to workout at 10am everyday...who wouldn't ? OH! And yoga pants, I want to live in fitness gear in my designed life!! Ask anyone who knows me in my real life and they'll tell you I only enjoy getting dressed up for nights out. I put about 15 minutes of effort into my business casual look. I know that I'll get where I want to be in life after a few years. And the people who doubted me will be asking how I did it.

Being Raw, Real and Trying To Help

I know what it's like to not feel comfortable in your own skin. Acting like you're confident from the outside, but inside you don't feel it. Constantly comparing yourself to your friends, coworkers and even family. Wondering how they did it, and why you can't. I want to help STOP all of those thoughts. While I'm far from perfect...and negative talk still comes into my head, I'm getting better every day. And I'm doing it all with the 21 Day Fix. It's amazing how following an eating plan and workout schedule can give you back that power that you thought you lost. Each day that I succeed is another boost for me. I'm proud when I tell my fiance, "I did so good today, not one cheat." And all that confidence spills over into other parts of my life. I want this for you.

Trying to Not Sabbotage Myself!

Sooo today I'm just going to talk about traveling and dieting. Mostly because Joe and I are headed back to Pennsylvania for the weekend! Yes, I'M SUPER EXCITEDDDD...not about the drive of course, mostly about seeing family! We're driving the 10 hour route tonight and I'm trying to plan out how to NOT ruin my healthy eating. Ever since #SweatingfortheWedding became my life mantra, I've been really "good" with eating. Don't get me wrong, I crave carbs like no other. But, it's a lifestyle and in order to be successful I have to stop giving into all of my whims. If you don't change the way you've always eaten, then you won't change the way you look!

I've been on-point with the Fix nutrition plan since Monday. That's right....4 days without deviating from what I planned on Sunday evening. How did I do it? Meal prep! Everybody wants to think that you don't have to prep, but you're just lying to  yourself. There's no way I would be on Day 4 if I didn't make all of my lunches, pack all of my snacks and plan all of my breakfasts and dinners on Sunday. It's so easy to open the fridge, see my labeled food and know exactly what I'm supposed to take for the day. Things got a little shaky last night because I was dead tired and motivated for nothing. I improvised "Taco Night" with "Breakfast Burrito Night" LOL.

Here's the game plan on how to WIN at changing your lifestyle. PLAN ahead, know what you're going to eat and when. IMPROVISE correctly. So if you're feeling lazy that doesn't mean you get to have pasta and Alfredo sauce just because it's there. You have to pick the foods that fit into what you were planning to eat already! And finally, FOLLOW THROUGH. Stop promising yourself "tomorrow" or "on Monday." Because Monday comes and Monday goes and unless you commit to yourself, you'll be disappointing yourself week in and week out.

Beat July 4th Weight Gain and Bloat, 3 Day Refresh!

HOLIDAYS are FUN but the after party BLOAT stinks!

Or maybe it’s just been an entire month or two of bad choices and you have just plain had enough!
It's time to do a little summer cleaning of the diet and nutrition! I'm kicking off a brand new group----> It's going to focus on nutrition, clean eating, new recipes, nutrition tips, Shakeology and the brand new 3 Day Refresh to kick it off! We are doing this together, committed to starting over! Let’s pretend its January 1st and you are setting some new years resolutions to get into shape! It's never too late to make a change!


Now that the 4th of July is over, another holiday is history and we are officially into the heart of the summer!! It’s time to give ourselves a little restart!!!  Face it, no matter how healthy we think we eat, how much we think we exercise, there is always room for improvement!  Everytime I challenge myself to keep track of my food, to intensify my workouts I notice big jumps in my fitness, my energy level and overall how I feel each day.  I know personally it’s easy to get off track.  It starts with a few cocktails with friends, beers at the baseball game and smores around the campfire, and before you know it, you’re totally off track! Then you give up and say “oh well, I already messed today’s diet up…what’s the point in trying to salvage it now?” So you grab pizza or French fries! I feel your pain. But all the working out in the world isn't going to take away that bloated & sluggish feeling you get when you over eat and binge drink the whole holiday weekend!  I know because I did this last weekend at the Country USA Concert. 3 days camping outside, eating chips and drinking beer. I needed to change things up! And as I sat on my balcony brainstorming ideas for my next support group, this idea hit me!

How about we kick off July with the brand new 3-Day Refresh Program and incorporate that into a 30 day CLEAN Eating & Shakeology group! YES!  This is perfect!  Okay, so why is it perfect you might ask?! The 3 Day Refresh is designed to give you fast, clean, and efficient weight loss.  You can quickly drop a few pounds and inches, break a bad habit and get back on track!  Its 3 shakes a day, a fiber drink, plenty of water, fresh fruits, veggies, and healthy fats so that you keep your energy and your metabolism going.  It is not a juice or fasting diet but a healthy diet that is going to give your body nutrition vs starvation.

We will start with the 3 Day Refresh then 30 days of replacing 1 meal a day with Shakeology, healthy eating and any exercise of your choice.  It does not have to be a Beachbody Fitness Program, although I encourage you to do some form of physical activity for 30 minutes a day 5 days a week!  :)  (21 Day Fix, P90X3, Chalean Extreme, PIYO, T25).

Each day you will log into the group for your tip of the day, daily motivation, inspiration and accountability. I will share recipes along with ways to handle late night munchies, sugar cravings, emotional eating, temptations and more.  You will be accountable each day to report with the group your food and your workouts! At the end of the 30 days we will measure our progress, submit our results and in 30 days you will have kicked bad habits, introduced new healthy habits and be on your way to creating lifelong healthy habits!

Figure Friendly French Fries

You had to know that I've been trying to make this happen forever!! I LOVE French Fries, except they usually leave me feeling bloated and uncomfortable. In my effort to make my  healthy lifestyle easier...and yours, I developed the following: Figure Friendly French Fries.

I bought one regular potato and two sweet potatoes. Sweet potatoes have more vitamins and minerals in them so they ARE healthier. But I wasn't willing to have no classic fries in the batch :)


First step is to cut the french fries how you want! Personally, I don't have a special tool for it, so I cut the potatoes into quarters, then slid them through my mandolin (not the musical instrument, the kitchen utensil :) They ended up shaped like steak fries, which was cool with me.

After cutting them, SOAK THEM IN COLD WATER for at least 1 hour. This helps leech out some of the starch from the potatoes. They then bake up crispier than they would if you didn't do this. **I'd say this is the most important step**

Next, spray a pan with baking spray! I used Coconut Oil Spray....


The fries work well with the kind above, or an OLIVE OIL spray. Try not to just use the regular stuff. They won't get as crispy as possible if you do!

After spraying the pan, lay down the fries in a single layer. You can't pile them on top of each other! Then, spray the top layer. Sprinkle on sea salt. Bake at 400 degrees F for 30 minutes. FLIP. Bake 20 more minutes until you're satisfied with the crispy :)

What's the Difference in Kale?

I was sitting at work today wondering what to make myself for dinner, when Kale came to mind. I always see Kale Salads on websites and Pinterest, but honestly, I've never been able to make it really well. A few weeks ago I came across a site that told me the specific type of kale that's best for making kale chips....and I was like "whaaaat?!" I guess I just really never thought about how many types of kale there are. The grocery store I used to go to only ever had curly kale, so I assumed that was the universal kind. Boy was I WRONG! Here's what I found out today:
  • Curly Kale: This is the stuff that can be pretty bitter when you eat it raw. It's best to saute this kind and give it some more flavor with spices. Used for juicing and can be eaten raw in salads too. (I just personally do not like it in salads)
  •  Lacinato Kale: Also called "Dinosaur" Kale is a large blue-green leaf. It's not bitter at all, and this is the kind that I used for my salad. It's best to cut the leaves off of the stem because that stem is really hard!
  • Red Kale: This red tinged kale has a peppery flavor as well as sweet. Again, you'll want to remove the stem before cooking or eating because it is seriously tough!
  • Redbor Kale: This is the curly purple leaf that you probably get on your plate as a decoration at restaurants! While you CAN eat it, it's really not that tasty.
Like I said, for this salad I used Lacinato Kale. It's changed my mind about how I can use kale and how to work it into my daily life more!

Here's a recipe for you to try out to get some kale, and superfoods in your diet!


Ingredients:
- 1 Bunch Lacinato Kale
- 1/2 cup Carrots, Shredded
- 3/4 of a full Cucumber, Diced
- 1 Avocado, Diced
- 2 Tbsp Nutritonal Yeast
- 1/2 cup Walnuts, Raw, Chopped
- 1/2 cup Edamame, Shelled
 - 1 Bell Pepper, Any Color, Diced
- 1 Lemon
- 1/2 cup Tahini
- 1 tsp Garlic, Minced
- 3/4 cup Water

Directions:
- Cut kale off of stem. Chop thinly, or even use scissors to cut it into small pieces like I do!
- Add carrots, cucumber, avocado, nutritional yeast, walnuts, edamame and bell pepper to large bowl with kale, mix well.
- To make dressing, combine juice of 1 lemon with Tahini, Garlic and Water. Whisk together well. Pour on top of the salad and mix well.
- Let salad marinate in dressing in the fridge for at least 15 minutes.
